Pumpkin Chia Seed Pudding Recipe

With fall here in full swing, I’m obsessing over everything pumpkin, in particular my Pumpkin Chia Seed Pudding Recipe!

This recipe is super easy and loaded with nutrients like Omega 3‘s, Antioxidants, Vitamin C, and Minerals.  This makes for an awesome breakfast or snack.

Here’s what you need:

3/4 cup Almond Milk
1/2 cup Pumpkin Puree
1/4 cup Chia Seeds
Dash of Vanilla extract
1 tsp. Pumpkin Pie Spice
1 tsp. Maple Syrup (optional)

Combine all ingredients in bowl or glass- mix well-refrigerate 4 hours or more.

Enjoy!

…And if pumpkin just isn’t your thing, you can make your own version of Chia Seed Pudding by customizing it any way your heart and taste buds desire.

Simply combine:

1/4 cup Chia Seeds
2/3 cup Organic non dairy milk- your choice (Almond Milk/ Coconut Milk/Hemp Milk)
Organic Maple Syrup/Raw Honey/Stevia (to taste)

Mix ingredients together- refrigerate- Voila

Feeling extra special?
Try adding some healthy toppings like: goji berries, walnuts, cacao nibs, shredded coconut, banana, fresh seasonal berries, vanilla bean- the possibilities are endless!
